Tomato Cucumber Orzo Salad

I love my container garden. I visit it almost every day in hopes that I will discover a new piece of something. It's oddly rewarding.

My tomatoes are finally turning red (yes, it's September!) and I have an abundance of juicy, red tomatoes to use up!

I desperately want to use every last vegetable, and I started a Pinterest board with a variety of ideas to use my garden harvest. Check it out. I've managed to make pesto, rosemary bread, pizza sauce and a variety of other tasty things.

BUT, I want to share this one with you because everyone LOVES it. Even my dad!

AND, it's simple. Who doesn't love tasty and simple?

Ingredients Needed:

Half a package of Orzo

One cucumber

Two tomatoes

Half an onion

Feta or parmesan cheese (I prefer the feta)

1/4 cup of Italian Dressing

Instructions (so so easy)

  1. Cook orzo pasta for nine minutes, drain

  2. During this time, cut up the cucumber into small pieces and do the same with the tomatoes and onion

  3. Place them in a bowl big enough that you can stir everything together

  4. Add orzo pasta

  5. Add 1/4 cup of Italian Dressing (you can add more or less to your taste buds delight)

  6. Add the cheese (again, the amount depends on your taste buds but I used half the container)

  7. Stir well

  8. Place in the refrigerator as it tastes best cold

This is the perfect addition to any summer meal. The bowl is ALWAYS empty because people go back for seconds.

Last summer I purchased some lemon balsamic and mixed it with pepper, salt and olive oil. That was amazing...and I need to get to our little local shop that sells such things to get some more. The Italian Dressing is a great replacement for this.
